- 100 ml olive oil
- 100 g butter
- 120 g baby kale leaves
- 1 small brown onion, finely chopped
- 3 garlic cloves, finely chopped
- 250 g Arborio rice
- ½ cup white wine
- 3 cups (750 ml) hot vegetable stock, simmering
- ½ cup parmesan, finely grated, extra to serve
- 1/3 cup crème fraiche
- Finely grated zest of 1 lemon
